Brine And Cure Ratio Calculator
Brine And Cure Ratio: a planned Super Calculator tool. Covers meat mass (kg or lb). Stub page: the tool, its formula and a worked example are not published yet.
Brine And Cure Ratio Calculator is a planned calculator in the food and drink section of Super Calculator, covering food and drink.
What this calculator will compute
Inputs: meat mass (kg or lb), water mass (kg), target salt (%), cure type (label), target nitrite (ppm) and method (equilibrium/immersion).
Outputs: salt mass (g), curing salt mass (g), sugar mass (g), resulting nitrite (ppm) and safety flags (label).
Formula, recorded as scope and not yet verified against a primary source: Equilibrium curing computes salt and nitrite as a percentage of the combined mass of meat and any added water, which self-limits and cannot over-salt. Nitrite inclusion is capped by food safety regulation, commonly expressed as a maximum ingoing parts per million, and curing salt is typically 6.25% sodium nitrite by mass.
