Outputs: purchase quantity (kg or lb), portions per unit (n), cost per head (currency) and total food cost (currency).
Formula, recorded as scope and not yet verified against a primary source: Purchase mass equals served portion mass times guest count divided by the yield factor, where yield accounts for trim, bone and cooking loss. Roast meat commonly loses 25% to 30% of raw mass, so raw purchase weight must be grossed up rather than equal to plated weight.
